I stumbled upon this recipe while looking for soups to cook. I am overcoming a cold right now and a bowl of soup is what I needed. I found the recipe on my recipes.
Instead of using the grill I decided to use the oven.
After the veggies are cooled off coarsely chop them and mix it with the corn bits.
Heat oil in a pot and put your chopped onions in to cook until tender, about 7 mins while the other veggies cool.
Stir in this tomato mix after onions are tender.
Add your 3 cans of the chicken broth and bring it to a boil, then turn the heat down and let it simmer for 30 mins.
Cool the chowder for 20 mins then put it in a blender until the chowder is smooth.
Whaaa la. Top it with whatever your heart desires and enjoy!
